Hello, and welcome to my Blog. This week’s Blog is about healthy school lunches for the kids. I know it’s sometimes a pain to get the kids up for school, make them breakfast, and then try to get them out the door with a fairly “healthy” lunch. I know because I have a 7 and 10 year old. So I’m going to give you some tips and ideas on how to meal prep some healthy lunch options that the kids can take and they won’t break the bank either.
So the first one is hard-boiled eggs. Most people including kids like hard-boiled eggs. The key is to prep them the day or night before and keep them in the fridge until you are ready to fill them and put them in their lunch. My suggestion and tip is fill them with the egg mixture right before packing and they will be fresher and taste better. I recommend about 3-4 eggs per child per week. So if you have two kids at 3 eggs each per week that is 6 eggs. So one dozen should last two weeks. (Not including breakfast or baking).
The second lunch idea is hummus and fresh cut up veggies. My kids like cukes, peppers, and carrots. I cut these up in strips the day or night before and put them in sandwich bags until the next morning. If you don’t make your own hummus, try buying the ones in the store but be careful as to which brands to buy. I might do a Blog on the different grocery items to stay away from. But just watch, certain brands aren’t as healthy as they say.
Another great healthy lunch option is to make a batch of no-bake chewy granola bars or fruit bars. These are great also, if the kids play sports after school or have other activities and they need to grab something quick and healthy. My wife make these great fruit bars (I’ll have to get the recipe and share it) but if you google it I’m sure some options will come up. My recommendation is to try and find a low sugar option.
Most kids like sandwiches or bread items but I recommend trying a wrap instead. Fill the wrap with the veggies and hummus and maybe add some lettuce or some sort of light sauce on it. It’s good, healthy and quick. You can use some of the veggies that you have already prepped. My wife makes a wrap from bandannas, cocoa powder, honey, and sun butter/peanut butter. I know some schools have a no peanut policy so check with your school to make sure.
When I was a kid and my kids today like egg salad. You can put this in a wrap or just in a bowl to eat with a few crackers and some veggies dipped in hummus or ranch dressing. You could alternate between the hard-boiled one week and egg salad the next.
Another fun and healthy lunch is a sandwich or wrap skewer. Make a wrap or sandwich with the meat, lettuce, cheese or whatever and then cut it into fourths or triangles and stick a tooth pick or short skewer through them. It’s fun for the kids and easy to make.
Well I hope you like my ideas and suggestions. These are easy and I actually try these on my kids’ lunches and they are a hit. Just try it and see what happens and see if it gets easier in the mornings.
